The study of the umami flavour as the fifth sense; development of animal in vitro cell culture as an efficent reporter system; flavour perception and sensation; taste receptor cell assay; transformation and transgenic plant technology.
  • Micropropagation of Superfruits (fig, lemon, olive etc.) and other high value crops
  • Suspension cultures of tropical medicinal plants (cell and root suspension)
  • Plant biochemical studies on pathways linked to the glutamate production and the umami flavor.
